Ciao a tutti cari amici,

oggi torna a trovarci Federico, il cugino avellinese di Cubo, che abbiamo conosciuto nell’episodio n.2 “In bocca al lupo”, nonché fratello di Sonia (ospite nell’almanacco n.47- 48).

Torna per raccontarci qualche cosa in più del suo lavoro di allevatore di bovini allo stato brado di razza podolica e della sua passione per questa professione tutt’altro che facile!

Cubo esordisce con un bel ricordo legato alla sua infanzia: il nonno gli aveva regalato…

”Un gattino!” direte voi, “un cane!” ho pensato io!…

No!: una mucca di nome Chiaraluna! Una mucca in carne ed ossa che il nonno aveva allevato per lui e i cui vitelli venduti avevano fruttato al nostro Cubino i suoi primi guadagni…

Federico era solo un bambino quando iniziò ad andare durante l’estate con il nonno a portare le mucche in transumanza in Abruzzo e in Puglia, da allora non ha più smesso di occuparsi di allevamento e di la produzione di formaggio.

I sacrifici sono tanti e le giornate sono lunghe e faticose, ma Federico continua a portare avanti questo antico mestiere grazie ad una passione e ad un vero e proprio attaccamento per questa razza che lo hanno portato persino a battezzare uno ad uno circa trecento animali! Le mucche fanno una bella vita…vivono allo stato brado, pascolando senza alcuna costrizione nel loro ambiente naturale.

La razza podolica è una razza dalle origini antichissime originaria della Podolia (regione dell’Ucraina) che viene allevata nell’Appennino meridionale dalla Campania alla Puglia, fino ai rilievi della Calabria. Ne sono rimasti solo 25.000 capi iscritti al libro genealogico.

Circa il suo arrivo in Italia, ci sono due ipotesi: che sia arrivata durante le invasioni degli Unni provenienti appunto dalla Podolia; che sia giunta da Creta e che discenda dal toro sacro cretese.

Federico spiega che il mestiere di allevatore, soprattutto nel suo caso, vede alti e bassi, non dà un reddito certo e prevedibile perchè, essendo un tipo di allevamento del tutto naturale, dipende molto dall’andamento del tempo, delle stagioni, delle variazioni climatiche (ad esempio, se piove a sufficienza sarà garantito il giusto quantitativo d’erba e le mucche figlieranno di più, ma se nevica a lungo o fa troppo caldo, il ritmo di riproduzione cambia).

Fino all’inizio del 1900, erano le famiglie più ricche ad essere proprietarie degli armenti (branco di grossi animali quadrupedi domestici, specialmente cavalli o buoi) e diventare massaro (il mezzadro o fattore che presiede all’amministrazione e coltivazione di poderi o all’allevamento) rappresentava il raggiungimento di una posizione nella società.

Federico spiega che oggi allevare in modo del tutto naturale, restando comunque competitivi nonostante i costi maggiori o le rese inferiori rispetto agli allevamenti intensivi, è possibile grazie ai programmi di sostegno dell’Europa.

Non basterebbero infatti la vendita dei vitelli maschi e la produzione del caciocavallo podolico (un formaggio tipico del sud d’Italia) a sostenere un’attività di questo genere che, come detto, non garantisce una produzione costante.

I finanziamenti dell’Unione europea, distribuiti un po’ in tutte le regioni italiane, vengono erogati a fronte di una serie di garanzie (come ad esempio quella del greening) e, dando ossigeno agli allevatori, preservano le eccellenze locali.

Federico è fiero di affermare che la carne italiana è la migliore del mondo… ma noi sappiamo che tutto il mondo è paese (cioè che certe cose accadono indipendentemente dalla latitudine o longitudine perché tutti gli uomini sono accomunati da atteggiamenti e scelte comuni) e che anche qui da noi gli allevamenti non sono tutti naturali come vorrebbe Federico e al contrario ci sono ottimi allevamenti nel resto d’Europa e in America!

Ma torniamo alle protagoniste dell’episodio: le mucche di Federico servono per la riproduzione, i vitelli maschi vengono venduti all’ingrassatore che poi li manda al macello, mentre i vitelli femmina restano ad incrementare l’allevamento e solo in caso di difetti strutturali o se nate da incroci e quindi non di razza pura, vengono macellate, così da preservare la genealogia della razza, (cioè l’integrità e la purezza dei caratteri generali standard di una razza) dalla quale dipende anche il valore di una mucca.

Quindi nel caso di una mucca che non rientra nello standard di razza, questa viene scartata e venduta perché non è adatta per figliare. Così anche per i tori: solo quelli con caratteri di razza ben definiti possono ambire a tale titolo! (un allevamento ha una media di sei tori per duecento mucche).

Torniamo ai nomi scelti per le mucche: fino a che non partoriscono, sono giovenche (vacche giovani da un anno e tre anni di età) e portano il nome della madre.

Dopo aver partorito, Federico le battezza, innanzitutto ispirandosi ai nomi della sua famiglia! Ci sono così la mucca Nannina (da nonna Anna), la mucca Alessia (come sua moglie), la mucca Gilda (come sua mamma e sua figlia, così bella che ha vinto un premio!). Ma c’è anche la mucca Bellanova, come un ministro del governo italiano e la mucca Katrina come l’uragano americano del 2005… Insomma, ce n’è per tutti i gusti!

Le mucche chiamate dagli allevatori, riconoscono il proprio nome e rispondono! Il momento quotidiano della mungitura per esempio è un’occasione di “dialogo” tra uomo e animale!

Nessun animale, nel caso di un parto difficile o di una malattia, è mai stato abbandonato al suo destino e anche quando è evidente che non ce la farà, viene accudito fine alla fine.

Insomma, quelle di Federico sono mucche amate come figli!

Hello to all dear friends!

Today Federico, Cubo’s cousin from Avellino who we met in episode 2 “In bocca al lupo” comes back to visit us. Federico is also Sonia’s brother, our guest in the almanac n. 47- 48.

Federico comes back to tell us something more about his work as a breeder of Podolica cattle, and his passion for this profession which is anything but easy!

Cubo begins with a beautiful memory linked to his childhood: an animal that his grandfather had given him —

“A kitten!” you say? “a dog!” I thought?

No! A cow named Chiaraluna! A cow in flesh and blood that his grandfather had raised for him and whose calves were sold which gave our Cubino his first earnings.

Federico was only a child when he began going to see his grandfather during the summer to take the cows from one grazing ground to another, from Abruzzo to Puglia. Since then, he has never stopped working with cow breeding and cheese production.

The sacrifices are many and the days are long and tiring, but Federico continues to carry on this ancient craft thanks to a passion and a real attachment for this breed that has even led him to baptize about three hundred animals one by one! Cows have a good life … they live in the wild, grazing in their natural environment without any constraints.

The Podolica breed is a breed with very ancient origins originally from Podolia, a region of Ukraine, that is now bred in the southern Apennines from Campania to Puglia, up to the hills of Calabria. There are only 25,000 animals left in this breed.

There are two hypotheses concerning this breed’s arrival in Italy: that it arrived during the invasions of the Huns coming precisely from Podolia; and that it came from Crete and descended from the sacred Cretan bull.

Federico explains that the job of breeder, especially in his case, sees ups and downs. He does not have a predictable income because, being a completely natural type of breeding, it depends a lot on the time of the seasons, and climatic variations. For example, if it rains enough, the right amount of grass will be guaranteed and the cows will have more offspring, but if it snows for a long time or is too hot, the pace of reproduction changes.

Until the early 1900s, it was only the wealthiest families who owned the herds (herds of large domestic quadrupedal animals, especially horses or oxen) and became farmers (the sharecropper or farmer who presides over the administration and cultivation of farms or breeding) and represented the achievement of high position in society.

Federico explained that today breeding in a completely natural way, while remaining competitive despite the higher costs or lower yields compared to intensive farming, is possible thanks to European support programs.

In fact, the sale of male calves and the production of caciocavallo podolico (a typical cheese of southern Italy) would not be enough to support an activity of this kind which, as mentioned, does not guarantee constant production.

Funding from the European Union, distributed to some extent in all Italian regions, is disbursed because of a series of guarantees, such as that of greening and, giving oxygen to farmers, preserving local excellence.

Federico is proud to say that Italian meat is the best in the world … but we know that tutto il mondo è paese (that is, certain things happen regardless of latitude or longitude because all people share common attitudes and choices) and that also here the farms are not all natural as Federico would like and on the contrary, there are excellent farms in the rest of Europe and in America!

But let’s go back to the protagonists of the episode: Federico’s cows are used for reproduction; the male calves are sold to a fattening farm and then they are sent to the slaughterhouse. The female calves remain to breed and only in case of structural defects or if born from crosses and therefore not purebred, they are slaughtered, so as to preserve the genealogy of the breed, (ie the integrity and purity of the standard general characteristics of a breed) on which the value of a cow also depends.

So, in the case of a cow that does not meet the breeding standard, it is sold because it is not suitable for calving. The same applies to bulls: only those with well-defined breed characteristics can aspire to this title! A farm has an average of six bulls for two hundred cows.

Let’s go back to the names for the cows: until they give birth, they are heifers (young cows from one year to three years of age) and bear the mother’s name. After giving birth, Federico baptizes them, first of all inspired by the names of his family! So, there is the cow Nannina (named for grandmother Anna), the cow Alessia (like his wife), the cow Gilda (like his mother and her daughter, so beautiful that she has won a prize!) There is also the Bellanova cow, like a minister of the Italian government and the Katrina cow like the American hurricane of 2005 … In short, there is something for everyone!

When the cows are called by their names by the breeders, they recognize their names and respond! The daily milking, for example, is an opportunity for “dialogue” between person and animal!

No animal, even in the case of a difficult birth or a disease, has ever been abandoned to its fate and even when it is evident that it will not make it, the cow is taken care of until the end. In short, Federico’s cows are loved like children! Could this be the secret to such a special caciocavallo?
